Role Overview
Pastry Sous Chef โ Conservatory Food Hall at Wynn Al Marjan Island, located in Ras Al Khaimah, UAE, approximately 50 miles from Dubai International Airport.
Company Overview
Wynn Al Marjan Island will be the first integrated resort in the UAE, opening in 2027. The resort will feature 1,530 rooms and suites, 22 restaurants, lounges, and bars, a theater, a beach club, multiple swimming and wading pools, water features, a five-star spa, a salon, a shopping promenade, and a celebrations and events center.
Role Purpose
Support the Executive Chef in overseeing daily pastry production operations and workflow in the Conservatory Food Hall, ensuring all products meet established quality, presentation, and consistency standards while supervising and developing the kitchen team.
Key Responsibilities
Production Operations
- Support the Executive Chef in overseeing daily production operations and workflow.
- Supervise daily pastry production including desserts, cakes, plated desserts, amenities, and special orders.
- Assist with production planning, scheduling, and prioritization.
- Carry out additional duties as assigned by the Executive Chef.
Quality & Standards
- Ensure all products meet established quality, presentation, and consistency standards.
- Ensure precision, consistency, and visual presentation across all pastry items.
- Maintain strict compliance with hygiene, sanitation, and food safety standards.
Team Leadership
- Supervise and guide kitchen team members during production periods.
- Support training, coaching, and on-the-job development of team members.
Operations & Maintenance
- Monitor product handling, storage, and usage to minimize waste.
- Ensure equipment and work areas are maintained in clean, safe, and operational condition.
Qualifications & Experience
- Recognized culinary qualification or equivalent professional training in Pastry Arts or Pรขtisserie.
- Demonstrated professional experience in a luxury hotel, resort, or high-volume pastry production environment.
- Sound technical knowledge of classical and contemporary pastry production, including desserts, cakes, and finishing standards.
- Working knowledge of food safety, hygiene, and HACCP principles.
Skills & Competencies
- Proven ability to supervise and support production teams, ensuring consistency, quality, and adherence to established standards.
- Ability to operate effectively in a structured, deadline-driven production environment.
- Strong organizational, communication, and interpersonal skills.
- Ability to work collaboratively within a multi-disciplinary culinary team.
