Role Overview
Junior Cost Controller - Food and Beverage at SIHAMCO, supporting the Kooz Karak brand across retail operations.

Role Purpose
Serve as the key cost control authority for the F&B department, ensuring accurate inventory management, cost monitoring, and compliance with company policies while supporting profitability and operational efficiency across retail operations. Work collaboratively with Finance, Procurement, and F&B teams to achieve budget targets and maintain quality standards.
Key Responsibilities
Cost Monitoring and Analysis
- Maintain accurate recipe costing, item pricing, and system master data.
- Monitor and control F&B costs in line with budget targets.
- Analyze daily, weekly, and monthly cost of sales and variance reports.
- Investigate and resolve discrepancies, wastage, and inefficiencies.
- Translate complex data into actionable insights.
- Identify cost-saving opportunities.
Menu and Reporting
- Lead Menu Engineering Meetings with the F&B team to drive profitability improvements.
- Deliver daily, weekly, and monthly reports that support bottom-line performance.
- Submit accurate and timely month-end reports to the Financial Controller or F&B Director.
Inventory and Reconciliation
- Oversee physical stock counts and ensure accurate reconciliation between POS, stock control, and accounting systems.
Procurement Collaboration
- Collaborate with Procurement to source cost-effective, high-quality products.
- Monitor supplier pricing and negotiate fixed-term contracts where applicable.
Compliance and Governance
- Ensure compliance with company procedures, audit standards, and local regulations.
Qualifications & Experience
- Bachelor's degree in Accounting, Finance, or Hospitality Management.
- Proven 3β5 years of experience as a Cost Controller within the restaurant, fast-food, or hospitality industry.

Technical Systems
- Materials Control (MC System) β Essential.
- Micros POS (Oracle Hospitality) β Essential.
- Advanced MS Excel Skills (Pivot Tables, VLOOKUP, Macros) β Essential.
- Sun System / Vision β Preferred.
- Future Log β Preferred.
- Netsuite (Oracle) β Preferred.
