Role Overview
Hygiene Officer at Marriott. This role supervises and coordinates food operations to ensure compliance with hygiene and food safety standards.
Role Purpose
Oversee food safety and hygiene operations across food handling areas, advise on proper practices, identify and mitigate food safety risks, and provide training and technical guidance to ensure all operations meet government requirements and company standards.
Key Responsibilities
Food Safety & Hygiene Operations
- Supervise and coordinate operations to ensure compliance with hygiene and food safety standards.
- Identify key areas of risk in various food operations and take preemptive remedial action.
- Advise on proper food handling practices across all food preparation areas.
- Provide technical advice on product labeling issues for fulfilling government requirements.
Training & Development
- Provide food hygiene training for all new hires and trainees.
- Deliver guidance on food safety best practices to kitchen and food handling staff.
People Management
- Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, and motivating and coaching employees.
- Develop and maintain positive working relationships with others.
- Support team to reach common goals.
- Listen and respond appropriately to the concerns of other employees.
Compliance & Safety
- Follow all company and safety and security policies and procedures.
- Report maintenance needs, accidents, injuries, and unsafe work conditions to manager.
- Complete safety training and certifications.
- Ensure adherence to quality expectations and standards.
General Duties
- Ensure uniform and personal appearance are clean and professional.
- Maintain confidentiality of proprietary information.
- Protect company assets.
- Address guests' service needs.
- Speak with others using clear and professional language.
- Perform other reasonable job duties as requested by Supervisors.
Qualifications & Experience
- Bachelor's degree from accredited university or college in Environmental Health or Culinary.
- 2 to 4 years of related work experience.
- At least 1 year of supervisory experience.

- Food safety and hygiene expertise.
- Knowledge of government food safety requirements and labeling standards.
- Staff supervision and coaching.
- Training delivery.
- Risk assessment and remedial action.
- Clear and professional communication.
- Physical capability to stand, sit, or walk for extended periods; reach overhead and below the knees, including bending, twisting, pulling, and stooping; move, lift, carry, push, pull, and place objects weighing 25 pounds or less without assistance.
