Head Chef - Pastry & Bakery

Role Overview

Head Chef - Pastry & Bakery at RISE Enterprise. This role leads the pastry and bakery section with full responsibility for menu direction, team management, and operational excellence.

Role Purpose

Take full ownership of the pastry and bakery section to set dessert and bakery menu direction, manage pastry budgets and staff, and ensure every item reflects the brand's quality and standards.

Key Responsibilities

Menu & Quality Leadership

• Own pastry and bakery section menu design, quality, and overall direction.
• Monitor customer feedback and pastry section performance to continuously improve standards.

Team Leadership & Development

• Lead, manage, and develop the entire pastry team, including Sous Chefs and section chefs.

Budget & Resource Management

• Plan and control the pastry budget, including ingredient costs, labor, and equipment needs.
• Build and manage supplier relationships to ensure quality ingredients at the right cost.

Compliance & Standards

• Ensure full compliance with food safety, hygiene, and health and safety regulations.

Stakeholder Collaboration

• Work with the F&B Manager and CEO on pricing, promotions, and new dessert or bakery launches.

Qualifications & Experience

• Pastry or bakery degree or diploma required.
• Formal kitchen or business management training is a strong plus.
• At least 10 to 15 years of pastry or bakery experience.
• Several years as a Senior Sous Chef or similar role.

Skills & Competencies

• Excellent leadership skills.
• Strong financial management capability.
• Advanced menu development skills.
• Ability to run the full pastry section independently.
