Role Overview
Commis II at InterContinental Fujairah Resort, operated by InterContinental Hotels Group. The resort is located on Al Aqah Beach in Fujairah, beneath the Hajjar Mountains.

Role Purpose
Support the kitchen team with basic food preparation and daily culinary operations while developing your culinary skills under the direction of the Chef de Partie and senior chefs. Ensure food is prepared safely, efficiently, and to hotel standards.
Key Responsibilities
Food Preparation
- Prepare ingredients by washing, peeling, chopping, portioning, and ensuring proper storage.
- Assist with mise en place and basic food preparation according to recipes and instructions.
- Support timely service while maintaining food quality, consistency, and presentation.
Kitchen Operations & Support
- Support the Chef de Partie and senior kitchen team in daily operations while maintaining quality and sanitation standards.
- Keep workstations, utensils, and equipment clean, organized, and in good condition.
- Perform other reasonable duties as assigned.
Food Safety & Hygiene
- Maintain proper food hygiene, HACCP, cleanliness, and sanitation standards.
- Ensure proper storage, labelling, and FIFO rotation of ingredients.
- Report any equipment or food safety concerns to the Chef de Partie.
- Follow all hotel SOPs, health, safety, fire, and hygiene procedures.
Qualifications & Experience
- Completion of a degree or certificate in culinary arts.
- Previous kitchen or culinary experience; experience as a Chef or equivalent combination of education and experience preferred.
- Basic knowledge of food preparation, kitchen hygiene, HACCP, and food safety standards.
Skills & Competencies
- Good oral and written communication skills.
- Ability to work in a fast-paced environment and stand for extended periods.
- Physically able to lift, push, pull, bend, and kneel as required.
- Ability to work a flexible schedule including nights, weekends, and public holidays.
