Chief Steward

Role Overview

Chief Steward at Miral Destinations, Abu Dhabi. The role manages the Stewarding team and ensures smooth, efficient operation of the Food & Beverage Department in direct support of the company's core processes and guest experience delivery.

Role Purpose

To maintain kitchen hygiene standards in compliance with HACCP protocols, manage the Stewarding team effectively, and control departmental chemical costs within budget while ensuring seamless Food & Beverage operations that support the guest experience.

Key Responsibilities

Guest & Colleague Relations

• Display a friendly, helpful, and cheerful attitude while communicating effectively with guests and colleagues to support company strategy and values.
• Represent and promote the company in a positive manner at all times to maintain professional brand image with all stakeholders.

Department & Company Performance

• Help achieve department and company objectives, action plans, and key performance indicators.
• Encourage colleagues to be creative and innovative, challenging and recognizing them for their contribution to operational success.
• Support the implementation of the Food & Beverage Culinary philosophy, demonstrating and reinforcing company values and culture.

Health, Safety & Compliance

• Enforce and adhere to all UAE laws, Health, Safety & Environmental policies, industry and company rules and regulations.
• Report any safety concerns or incidents to management in order to minimize risk and maintain a clean, safe, and hygienic environment for all guests and colleagues.
• Adhere to all emergency procedures, ensuring guest safety and participate in evacuation if necessary.

Stewarding Operations

• Manage the Stewarding team effectively.
• Prepare and post weekly work schedules for Stewarding colleagues, ensuring they reflect business needs and key performance indicators.
• Adjust or balance the size of colleague teams to maximize productivity without sacrificing guest service.
• Monitor all Stewarding operations, especially during peak business periods, assisting and making adjustments where necessary.

Kitchen Hygiene & Sanitation

• Maintain the kitchen's hygienic condition as per HACCP standards.
• Ensure all areas of responsibility are organized in order to maintain them according to sanitary guidelines.
• Ensure the cleanliness of all kitchen and back-of-house areas of Food and Beverage.

Inventory & Equipment Management

• Assume responsibility for ordering all kitchen cleaning supplies to maintain inventory par stock.
• Carry out quarterly inventory of operating equipment.
• Clean and restock all operating equipment for all outlets and banquets.
• Liaise closely with outlet colleagues regarding their needs for operating equipment and its placement.

Cost Control

• Ensure proper use of cleaning products and chemicals in a continuous effort to keep costs to a minimum.
• Ensure that departmental chemical costs are kept within budget.

Qualifications & Experience

Essential

• High School Diploma.
• 1–2 years' experience in the same role, OR 4 years' experience as Assistant Chief Steward.
• Ability to work under pressure.
• Ability to work well with others as a team member.
• Ability to spend long hours standing if required.
• Good communication and listening skills.
• Leadership skills.
• Attention to detail.
• Problem-solving skills.

Desirable

• College Diploma in Food Services or Culinary Arts.
• Proficiency in Microsoft Word, Excel, and Outlook.
• Native Language and English Language proficiency.
