Role Overview
Chef De Partie - MarBar Kitchen at Hilton.
Role Purpose
Prepare and cook authentic Spanish dishes to consistent standards while supervising kitchen team members and maintaining food safety, hygiene, and quality across the assigned section.
Key Responsibilities
Food Preparation & Execution
- Prepare, season, cook, and test dishes according to standard recipes and Spanish culinary techniques.
- Ensure consistency in taste, quality, and presentation across all prepared dishes.
- Maintain strong knowledge of food preparation, cooking methods, portion control, and presentation standards.
Team Supervision & Support
- Oversee and support the kitchen team within the assigned section.
- Provide guidance and assistance to Commis Chefs and other kitchen team members.
- Ensure smooth and efficient operations in the absence of senior chefs.
Hygiene & Food Safety
- Keep all work areas, equipment, and utensils clean, tidy, organized, and free from cross-contamination.
- Follow proper food safety and hygiene standards in all kitchen operations.
- Maintain compliance with health, safety, sanitation, and food hygiene regulations.
- Ensure understanding and application of HACCP standards.
- Maintain the highest standards of guest and team member well-being.
Inventory & Storage Management
- Monitor the quality and freshness of ingredients.
- Ensure proper storage, labelling, and stock rotation in line with food safety requirements.
Cost Management
- Contribute to controlling food costs by minimizing waste.
- Maintain portion control to support departmental financial targets.
- Use ingredients efficiently to reduce waste and expense.
Qualifications & Experience
- Diploma or certification in Culinary Arts, Professional Cookery, or a related field.
- Minimum 2β3 years of professional kitchen experience, preferably in a hotel, restaurant, or high-volume culinary operation.
- Previous experience working as a Chef de Partie or in a similar kitchen role.
Skills & Competencies
- Good knowledge of Spanish cuisine, ingredients, cooking techniques, and traditional dishes.
- Strong attention to detail and commitment to maintaining consistent food quality and presentation.
- Good organizational and time-management skills, with the ability to work effectively under pressure.
- Good communication and teamwork skills.
- Ability to supervise and support kitchen team members.
- Basic computer skills, with the ability to use standard Microsoft Office applications and kitchen-related systems as required.
- Passion for Spanish cuisine and a genuine interest in delivering high-quality culinary experiences.
