Role Purpose

To organize and manage all bakery kitchen activities in partnership with the restaurant chef, ensuring safe, smooth, and profitable operations while maintaining Anantara's culinary standards and food safety compliance.

Key Responsibilities

Operations & Kitchen Management

• Organize all activities within the bakery and restaurant kitchen area, ensuring safe, smooth, and profitable operation within the framework of the hotel.
• Maintain outlet safety at all times.
• Take responsibility for asset management of all outlet property and facilities.

Culinary Standards & Development

• Support the development of restaurant cuisine concepts and standards.
• Adhere to Anantara food preparation and presentation guidelines to ensure consistent quality culinary offerings to guests.
• Continually recommend improvements and additions to Anantara presentation guidelines.
• Recommend menu changes according to seasonal product availability.
• Maintain familiarity with local market and suppliers.

Food Safety & Sanitation

• Maintain food safety and protection standards.
• Ensure all food in working areas complies with food handling techniques, including dating, proper storage, and rotation.
• Maintain basic food safety and sanitation practices.

Training & Team Development

• Participate in departmental training to improve departmental skills and hotel service levels.
• Provide team members with training and resources to care for guests.

Stakeholder Relations

• Promote positive inter-departmental relations through candid communication and cooperation.
