Sous Chef ( Italian Cuisine Experienced )

Role Overview

Sous Chef (Italian Cuisine Experienced) at RISE Enterprise. This is a full-time kitchen leadership position managing daily operations and leading the complete kitchen team in the Executive Chef's absence.

Role Purpose

Manage daily kitchen operations across all sections, lead and develop the kitchen team, oversee food quality and presentation, control costs, maintain safety and hygiene standards, and support menu planning and development to ensure the kitchen runs safely, efficiently, and to the highest standard.

Key Responsibilities

Operations & Kitchen Management

• Manage daily kitchen operations across all sections.
• Lead the kitchen in the Executive Chef's absence.
• Ensure the kitchen runs safely, efficiently, and to the highest standard.

Team Leadership & Development

• Supervise, schedule, and develop Junior Sous Chef, Chef de Partie, and all kitchen staff.
• Handle staff recruitment, training, performance reviews, and discipline as needed.

Quality & Standards

• Ensure consistent food quality, presentation, and portion control across the entire menu.
• Enforce food safety, hygiene, and cleaning standards across the kitchen and storage areas.

Cost Control

• Control kitchen costs, including stock, ordering, labor, and waste management.

Menu & Strategy

• Support menu planning and development with the Executive Chef, including seasonal changes.

Qualifications & Experience

• Culinary diploma or degree required.
• Kitchen management or hospitality training is a plus.
• At least 8 to 10 years of kitchen experience, including time as a Junior Sous Chef or similar role.

Skills & Competencies

• Excellent leadership skills.
• Strong cost control and organizational skills.
• Ability to manage a full kitchen team under pressure.
