Role Overview

Sous Chef – Arabic Sweets at Wynn Al Marjan Island, located in Ras Al Khaimah, UAE.

Company Overview

Wynn Al Marjan Island will be the first integrated resort in the UAE, set to open in 2027, located 50 miles from Dubai International Airport in Ras Al Khaimah. The resort will offer 1,530 rooms and suites, 22 restaurants, lounges and bars, a theater, and a beach club. It will feature multiple swimming and wading pools, water features, a five-star spa, a salon, a shopping promenade, and a celebrations and events center.

Role Purpose

Support the Executive Chef in overseeing daily Arabic Sweets and Indian sweets production operations and workflow, ensuring all products meet established quality, authenticity, presentation, and consistency standards while supervising kitchen team members and maintaining strict compliance with hygiene, sanitation, and food safety standards.

Key Responsibilities

Production Oversight

  • Supervise daily Arabic and Indian Sweets production including baklava, kunafa, maamoul, basbousa, qatayef, luqaimat, halawet el jibn, amenities, and special orders.
  • Ensure authenticity, precision, consistency, and visual presentation across all Arabic Sweets, respecting traditional recipes and regional variations.
  • Monitor the handling, storage, and usage of nuts, ghee, dates, syrups, and other key ingredients to minimize waste.
  • Oversee the preparation of traditional doughs, fillings, syrups, and creams, including phyllo and kataifi, semolina bases, nut and date fillings, ashta, and flavored sugar syrups.

Planning & Operations

  • Assist with production planning, scheduling, and prioritization, including high-volume festive periods.
  • Operate effectively in a structured, deadline-driven production environment, including Ramadan and festive peak periods.

Team Leadership

  • Supervise and guide kitchen team members during production periods.
  • Support training, coaching, and on-the-job development of team members.

Compliance & Safety

  • Maintain strict compliance with hygiene, sanitation, and food safety standards.
  • Ensure equipment and work areas are maintained in clean, safe, and operational condition.

Additional Duties

  • Carry out additional duties as assigned by the Executive Chef.

Qualifications & Experience

  • Recognized culinary qualification or equivalent professional training in Pastry Arts, with specialized expertise in Arabic and Middle Eastern sweets.
  • Demonstrated professional experience producing Arabic Sweets in a luxury hotel, resort, renowned Arabic sweets house, or high-volume production environment.
  • Sound technical knowledge of traditional and contemporary Arabic Sweets, including phyllo and kataifi work, semolina and date-based pastries, syrups, creams, and finishing standards.
  • Working knowledge of food safety, hygiene, and HACCP principles.

Skills & Competencies

  • Proven ability to supervise and support production teams, ensuring consistency, quality, and adherence to established standards.
  • Strong organizational, communication, and interpersonal skills.
  • Ability to work collaboratively within a multi-disciplinary culinary team.
  • Knowledge of Gulf and Levantine sweets traditions and Arabic language skills are an advantage.
