Role Overview

Kaiseki Senior Chef de Partie at Four Seasons Hotel DIFC in Dubai. This role leads kaiseki cuisine operations within the Japanese kitchen section of a boutique 106-room luxury hotel located in the Dubai International Finance Centre.

Role Purpose

Lead kaiseki cuisine preparation and service while maintaining the highest standards of Japanese fine dining. Support kitchen operations, mentor junior chefs, and ensure seamless coordination between the kitchen and service teams to deliver exceptional guest experiences.

Key Responsibilities

Cuisine & Presentation

  • Prepare and present kaiseki-style dishes with attention to taste, seasonality, presentation, and portion control
  • Assist in creating seasonal menus and course progression based on traditional kaiseki principles
  • Maintain commitment to food quality, consistency, and artistic presentation

Kitchen Operations

  • Support daily kitchen operations, including mise en place, food prep, and timely service
  • Ensure proper setup and cleanliness of the Japanese section throughout the shift
  • Maintain a clean, tidy, and organized work area
  • Participate in daily briefings and team meetings

Food Safety & Stock Management

  • Maintain food safety and hygiene practices as per HACCP standards
  • Monitor stock levels, report shortages, and ensure proper storage of ingredients

Team Leadership & Communication

  • Train and guide junior chefs in Japanese cooking techniques and kitchen discipline
  • Communicate effectively with service team to coordinate timing and guest experience
  • Support the broader kitchen team with flexibility and willingness to assist

Personal Standards

  • Uphold personal grooming standards

Qualifications & Experience

  • Minimum 5 years of experience in Japanese fine dining, especially in kaiseki cuisine
  • Solid understanding of kaiseki philosophy, structure, and seasonal ingredients
  • Culinary degree or formal training in Japanese cuisine is a plus

Skills & Competencies

  • Excellent knife skills and mastery of Japanese cooking techniques
  • Strong communication and teamwork skills
  • Mentoring and leadership capability
