Role Overview

Executive Pastry Chef for Steak House by Alain Ducasse at Wynn Al Marjan Island, a luxury integrated resort opening in the United Arab Emirates in early 2027, located less than 50 minutes from Dubai International Airport.

Wynn Al Marjan Island is an opulent beachside resort destination on a picturesque island in the Arabian Gulf. The property features 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa, currently under construction.

Role Purpose

Lead the pastry and bakery operations for Steak House by Alain Ducasse, delivering exceptional pastry experiences aligned with luxury brand standards while building and managing a high-performing pastry team.

Key Responsibilities

Production & Operations

  • Plan and manage daily pastry and bakery production aligned to forecasts, reservations, and event requirements.
  • Ensure excellence in lamination, fermentation schedules, dough temperature control, and chocolate tempering.
  • Calibrate ovens, sheeters, mixers, and blast chillers to maintain quality standards.
  • Monitor pastry trends including plant-based, reduced sugar, local fruits, and modern techniques; propose innovations and pricing updates.

Standards & Quality

  • Standardize recipes with precise weights, yields, photos, and allergen declarations; maintain recipe cards in the system.
  • Set plating standards and monitor KPIs for taste, texture, portioning, and ticket times.
  • Conduct daily tastings and line checks.
  • Deliver exceptional pastry experiences that reflect the outlet concept and brand standards.

Team Leadership

  • Build, schedule, and lead the pastry team.
  • Allocate stations (lamination, baking, garnish, chocolate, plating) based on skill and business needs.
  • Author and update SOPs, recipe cards, and visual plating guides.
  • Conduct corrective coaching in service.

Guest & Stakeholder Engagement

  • Engage with guests on special requests including birthday and wedding cakes and dietary needs.
  • Host tastings when appropriate.
  • Collaborate with Culinary, Restaurant, Beverage, Procurement, Engineering, Finance, Marketing, and PR on launches and promotions.
  • Attend department and inter-department meetings; communicate relevant updates.

Compliance & Culture

  • Uphold Company policies, grooming standards, and Code of Conduct.
  • Champion sustainability through reduce, reuse, recycle practices.
  • Follow health and safety standards and drive continuous improvement.

Qualifications & Experience

  • Formal pastry education preferred (e.g., Diplôme de Pâtisserie or equivalent).
  • Minimum of 10 years' professional pastry experience.
  • Three to five years in a leadership role within luxury hotels, fine dining, or premium restaurant groups.

Skills & Competencies

  • Advanced pastry and bakery techniques: laminated doughs, viennoiserie, sourdoughs, entremets, tarts, petit fours, ice creams and sorbets, gluten-free and vegan adaptations.
  • Chocolate tempering and decoration; sugar work and showpieces.
  • Modern glazing and finishing techniques.
  • Creativity with strong aesthetic sense and balanced flavor profiles.
