Job description

Role Overview

Director of Food & Beverage at DoubleTree by Hilton Resort & Spa Marjan Island, Hilton. Location: Marjan Island.

Role Purpose

Lead and inspire the Food & Beverage team to create memorable dining experiences across the hotel. Drive the performance of all venues while ensuring every guest experience reflects the light and warmth of hospitality through strong leadership, commercial focus, operational excellence, and genuine care.

Key Responsibilities

Food & Beverage Operations

  • Lead all Food & Beverage operations, ensuring exceptional service, quality, consistency, and operational standards across all venues.
  • Oversee stock management and monthly inventories while controlling wastage and identifying opportunities to improve efficiency.
  • Ensure compliance with food safety, security, fire, health and safety, and all company policies and procedures.

Guest Experience

  • Deliver exceptional guest experiences, respond effectively to guest feedback, and continuously identify opportunities to enhance satisfaction.

Commercial Performance

  • Drive revenue, profitability, and sales opportunities while effectively managing food and beverage costs, payroll, budgets, and departmental expenses.

Team Leadership

  • Lead, motivate, coach, and develop the Food & Beverage team to achieve high performance and service excellence.
  • Conduct performance reviews, support succession planning, and create development opportunities for leaders and team members.

Brand Standards

  • Ensure all Food & Beverage operations consistently meet Hilton brand standards, service procedures, hygiene requirements, and quality expectations.

Planning & Performance

  • Set departmental objectives, budgets, work schedules, policies, and performance targets in line with hotel business goals.

Menu & Concept Development

  • Collaborate with culinary and Food & Beverage leaders to develop menus, dining concepts, promotions, and experiences that support guest expectations and commercial goals.

Communication & Stakeholder Management

  • Maintain strong communication within the department and effective working relationships across all hotel departments.

Sustainability

  • Promote environmentally responsible practices and identify opportunities to improve sustainability within Food & Beverage operations.

Qualifications & Experience

  • Proven leadership experience within Food & Beverage operations, preferably within a full-service hotel or resort environment.
  • Demonstrated experience in leading, motivating, coaching, and developing high-performing Food & Beverage teams.
  • Experience overseeing multiple Food & Beverage venues and diverse dining operations.
  • Degree or diploma in Hospitality Management, Food & Beverage Management, or a related discipline would be advantageous.
  • Previous experience within Hilton would be preferred.

Skills & Competencies

  • Strong commercial awareness with proven ability to manage departmental budgets, costs, revenue, and financial targets.
  • Strong understanding of Food & Beverage operations, brand standards, food safety, hygiene, and service excellence.
  • Ability to perform effectively in a fast-paced operational environment and respond positively to changing business needs.
  • Strong passion for delivering exceptional guest experiences and developing team members.
