Role Overview

Commis I at Emirates Flight Catering.

Role Purpose

Prepare culinary products to specification, supervise junior commis staff, manage section production planning and resources, and maintain the highest standards of food hygiene and safety across all kitchen operations.

Key Responsibilities

Food Preparation & Production

• Ensure timely, proper and efficient preparation of all products according to specifications, recipes and orders within allocated area.
• Manage section and shift-specific production planning, resource management, material and equipment scheduling, cooking, dishing and cutting.
• Ensure arrangement and dishing of food items according to specified menus in compliance with established Hygiene and Safety Procedures.
• Check, sort, receive and reject received ingredients to ensure compliance with specifications.
• Ensure appropriate storage of products according to food safety and quality guidelines.

Hygiene & Safety

• Always maintain high standards of food hygiene, cleanliness and tidiness in the kitchen, storage, chillers and freezers.

Supervision & Team Leadership

• Ensure that Commis II and Commis III are guided, trained and supervised to deliver allocated tasks on time.
• Ensure Commis II and Commis III have clearly understood instructions and expectations from the team.
• Allocate and ensure that Commis II and Commis III are completing tasks on time.
• Provide feedback and advocate policies and procedures to junior staff.

Cost Management & Innovation

• Attempt to revisit recipes through trials and innovative ideas using previous experience and guidelines with focus on reducing costs without compromising quality within section and area of operation.
• Keep supervisors pre-informed of any trials or cost reduction efforts.
• Share ideas with seniors on ways to reduce costs and expenses in a proactive manner.

Qualifications & Experience

• Minimum Senior Secondary School certificate.
• Minimum 2 years' experience in the culinary field, including any apprenticeship or industrial training duration, or 3 years' experience in lieu of technical qualifications.
