Role Purpose
As a Commis I (Bakery Section), you manage the hotel's daily pastry production and deliver memorable experiences that spread the light and warmth of hospitality to every guest. You are responsible for preparing high-quality baked goods, maintaining standards of quality and presentation, and supporting the culinary team in a professional kitchen environment.
Key Responsibilities
Bakery Production & Preparation
- Lead day-to-day pastry operations overseeing preparation, execution, and presentation of pastries and desserts.
- Prepare breads, rolls, breakfast pastries, desserts, cakes, and cookies according to standard recipes.
- Produce high-quality items for restaurants, banquets, buffets, and other hotel culinary requirements.
- Assist the Bakery Chef with daily mise en place and bakery production.
Quality & Presentation
- Ensure consistent quality, presentation, portioning, and freshness of all products.
- Decorate pastries and cakes with creativity and precision, maintaining high presentation standards.
- Enhance menu offerings by creating and implementing new pastry recipes and seasonal menus to elevate the dining experience.
Inventory & Storage Management
- Manage product inventory by maintaining an adequate supply of prepared products.
- Ensure proper storage for freshness and quality.
- Check, label, store, and rotate ingredients following FIFO procedures.
- Minimize food waste and use ingredients efficiently.
Health, Safety & Compliance
- Follow Hilton food safety, hygiene, HACCP, and health and safety standards.
- Maintain compliance with health, safety, sanitation, and alcohol awareness regulations.
- Operate bakery equipment safely and correctly.
- Maintain a clean, organized, and hygienic bakery and work area.
Team Support & Development
- Inspire and develop team members by supervising and supporting them.
- Monitor performance, provide coaching, and foster a positive and productive work environment.
- Work effectively with the Culinary Team and support other kitchen sections when required.
Professional Conduct
- Maintain high standards of personal grooming and professional conduct.
- Perform other reasonable duties as assigned by the Chef or Culinary Management.
Qualifications & Experience
- Culinary or Bakery qualification from a recognized culinary school or institution (advantage).
- Previous experience in a hotel, bakery, or professional kitchen (preferred).
- Basic knowledge of bakery production, food preparation, and kitchen hygiene.
- Knowledge of HACCP and food safety standards.
