Role Purpose
To maintain kitchen equipment and facilities to a high standard, ensure strict adherence to food safety and hygiene protocols, follow established culinary standards, and support departmental training and service excellence.
Key Responsibilities
Kitchen Operations & Equipment Management
- Maintain operating and kitchen equipment to a good standard with minimum breakage.
- Take responsibility for asset management of all outlet property and facilities.
- Maintain and oversee adherence to departmental checklists and cleaning schedules.
Food Safety & Compliance
- Maintain complete understanding of and adherence to company policy relating to fire, hygiene, and safety.
- Maintain food safety and protection, including dating, proper storage, and rotation practices.
- Ensure all food in working areas complies with food handling techniques.
- Maintain basic food safety and sanitation practices.
Culinary Standards & Presentation
- Follow the hotel culinary standards set in place.
- Adhere to Anantara food preparation and presentation guidelines to ensure consistent quality culinary offerings to guests.
- Continually recommend improvements and additions to Anantara presentation guidelines.
Training & Departmental Relations
- Participate in departmental training to improve departmental skills and hotel service levels.
- Provide associates with training and resources to take care of guests.
- Promote positive inter-departmental relations through candid communication and cooperation.
