Chef de Partie (Pastry) at InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa, operated by IHG Hotels and Resorts. The resort is located on Hayat Island, less than an hour from Dubai, in the United Arab Emirates.

Role Purpose
Support the Executive Pastry Chef in the day-to-day operation of the Pastry section while producing high-quality pastries, desserts and baked items to luxury resort standards. Guide junior colleagues and ensure preparation, presentation, hygiene and consistency are maintained at the highest level.
Key Responsibilities
Pastry Production and Presentation
- Prepare and present a variety of pastries, desserts, cakes, breads and other baked items according to established recipes and presentation standards.
- Maintain consistency in taste, texture, portioning and presentation across all pastry items.
- Take ownership of your assigned section and ensure mise en place is completed according to production and business requirements.
Quality Assurance and Inventory Management
- Check the quality, storage, handling and proper rotation of ingredients and finished products.
- Keep food wastage to a minimum and support effective food cost management.
- Monitor and manage proper stock rotation in accordance with food safety standards.
Kitchen Operations and Maintenance
- Ensure refrigerators, freezers, equipment and work areas are clean, organised and properly maintained.
- Follow all food safety, hygiene, health and safety requirements, as well as IHG brand standards.
Team Leadership and Development
- Guide and train junior colleagues on pastry preparation, hygiene, grooming and kitchen standards.
- Work closely with the wider Culinary team and support other areas of the kitchen when required.
Recipe and Menu Development
- Support the Pastry Chef in developing new desserts, pastries and recipes while keeping up with current trends.
Qualifications & Experience
- Diploma or Vocational Certificate in Culinary Arts, Pastry, Baking or a related field, or an equivalent combination of education and kitchen experience.
- Previous experience in a Pastry kitchen, preferably within a luxury hotel, resort or high-volume operation.
- Previous experience supervising or guiding junior kitchen colleagues.
Skills & Competencies
- Strong knowledge of pastry preparation, baking techniques, desserts and presentation.
- Good understanding of food safety, hygiene, stock rotation and waste control.
- Keen eye for detail with a focus on quality, consistency and presentation.
- Good communication skills and the ability to work effectively as part of a busy Culinary team.
