Bar Manager - Center Bar

Role Overview

Bar Manager – Center Bar at Wynn Al Marjan Island, located in Ras Al Khaimah, UAE, approximately 50 miles from Dubai International Airport. The resort will open in 2027.

Company Overview

Wynn Al Marjan Island will be the first integrated resort in the UAE. The resort will feature 1,530 rooms and suites, 22 restaurants, lounges, and bars, a theater, and a beach club. Amenities include multiple swimming and wading pools, water features, a five-star spa, a salon, a shopping promenade, and a celebrations and events center.

Role Purpose

Lead and manage the Center Bar operation within the Food & Beverage team, overseeing daily operations, mentoring bar staff, ensuring exceptional guest service, and maintaining compliance with health, safety, and sanitation standards while developing innovative beverage offerings aligned with current trends and guest preferences.

Key Responsibilities

Leadership & Team Management

• Lead, mentor, and motivate the bar team to maintain high standards of service and positive morale.
• Train bar employees and foster a positive team environment.
• Participate in meetings and training to stay updated and improve service quality.

Bar Operations & Inventory

• Oversee daily bar operations, including inventory management, ordering, receiving, and stock rotation to maintain optimal par levels and minimize waste.
• Set up the bar daily according to standard procedures and par levels.
• Ensure the bar counter is clean and well-maintained for guest comfort.
• Clean all designated areas following daily routines and hygiene protocols.

Compliance & Safety

• Monitor compliance with health, safety, and sanitation regulations; implement corrective actions when necessary.
• Uphold the highest standards of personal hygiene and dress code.
• Check identification when necessary to confirm legal drinking age requirements.

Beverage Service & Knowledge

• Prepare beverages accurately according to recipes and company standards.
• Maintain thorough knowledge of all menu items and confidently describe them to guests.
• Collaborate with the Beverage Manager to develop new cocktails and update beverage menus, ensuring alignment with current trends and guest preferences.

Guest Service

• Assess guests' needs and preferences, offering tailored recommendations and maintaining a welcoming atmosphere.
• Serve food and drinks professionally and courteously, always adhering to high standards.
• Resolve escalated guest complaints promptly and effectively to uphold guest satisfaction and the establishment's reputation.
• Refer guest concerns to the Beverage Manager or General Manager as appropriate, ensuring personalized service.

Financial Management

• Accurately charge customers, present bills promptly, and handle payments according to procedures.

Qualifications & Experience

• Minimum of 5–7 years of progressive experience in bartending and bar management within upscale or luxury hospitality establishments, with a proven ability to lead teams and oversee daily operations.
• Expert-level knowledge of classic and modern cocktails, premium spirits, wine, and current beverage trends, enabling the creation and development of innovative menus that appeal to diverse guest preferences.
• Demonstrated proficiency in managing bar operations, including inventory control, ordering, stock rotation, and maintaining optimal par levels to minimize waste and maximize efficiency.
• Formal bartending certification or recognized hospitality management training preferred; ongoing commitment to professional development and learning.

Skills & Competencies

• Exceptional customer service skills, with the ability to resolve escalated guest concerns professionally and maintain a welcoming, high-quality guest experience.
• Strong interpersonal and leadership abilities to mentor, motivate, and train bar employees.
• Comprehensive understanding of POS systems, financial procedures, and handling cash or card transactions accurately and securely.
