Role Purpose

Lead the stewarding team to keep kitchens, equipment, and service areas immaculate, safe, and ready for exceptional service. Ensure clean, polished equipment and supplies are available when needed to support Culinary and Food & Beverage operations and deliver the memorable experiences guests expect.

Key Responsibilities

Coordination & Preparation

• Coordinate with Culinary and Food & Beverage teams to ensure every kitchen and dining outlet has the clean, polished equipment it needs, when it needs it.

Quality & Standards

• Oversee the cleaning, storage, and distribution of china, glassware, silverware, and stewarding equipment, protecting their quality and appearance.
• Supervise cleaning and sanitising across kitchens and back-of-house areas, ensuring the team follows Hilton HACCP procedures and local health requirements.

Equipment & Maintenance

• Check that dishwashing machines and other stewarding equipment are used correctly and are properly maintained.
• Report promptly when equipment repairs are needed.

Cost & Resource Management

• Monitor stock, breakages, and supply usage to control costs without compromising quality.

Team Leadership

• Assign daily duties to team members.
• Train and coach team members to build a confident, dependable team.
• Recognise great work and team member contributions.

Safety & Wellbeing

• Promote safe working practices across the team.
• Respond promptly to hygiene or safety concerns.
