Role Overview
Senior Sous Chef - Pastry & Bakery at RISE Enterprise. This role manages pastry and bakery operations across multiple sections or outlets, supporting the Executive Pastry Chef in strategic planning and overseeing other Sous Chefs while ensuring consistent quality, safety, and cost control.
Role Purpose
Lead pastry and bakery operations across multiple sections or outlets in a senior leadership position, working closely with the Executive Pastry Chef to deliver consistent quality, safety, and cost control across the pastry section.
Key Responsibilities
Operations & Leadership
- Lead pastry and bakery operations across multiple sections or outlets.
- Supervise and support Sous Chefs, Junior Sous Chefs, and all pastry staff section-wide.
- Set and maintain consistent quality, presentation, and service standards across pastry outlets.
Strategy & Menu Development
- Lead menu development, seasonal updates, and new dessert or bakery item approval with the Executive Pastry Chef.
- Support the Executive Pastry Chef in strategic planning.
Financial & Supply Chain Management
- Oversee budgeting, cost control, stock management, and supplier coordination for pastry and bakery.
Compliance & Safety
- Ensure full compliance with food safety, hygiene, and health regulations across all pastry sections.
People Development
- Support recruitment, training programs, and performance management for the wider pastry team.
Qualifications & Experience
- Pastry or bakery diploma or degree required.
- Kitchen management or hospitality management training is a strong plus.
- At least 10 to 12 years of pastry or bakery experience.
- Several years of experience as a Sous Chef or similar role.
Skills & Competencies
- Excellent leadership skills.
- Strong budgeting and strategic planning skills.
- Ability to manage multiple sections or outlets.
