Role Purpose

You will lead the pre-opening, launch and ongoing operation of three distinctive F&B concepts — D.G.C.B. (a sophisticated cocktail bar), Scarlet Macaw (a bold, Latin-inspired restaurant), and The Nest (a relaxed poolside hospitality venue) — building the operation from the ground up while bringing the F&B vision of Kimpton Sevn Dubai to life and defining how these three concepts are experienced by guests.

Key Responsibilities

Pre-Opening & Opening Execution

• Lead recruitment and team building across all three outlets.
• Develop and execute pre-opening budgets and operational planning.
• Develop and implement standard operating procedures.
• Design service standards and guest journey experiences.
• Develop and deliver training programmes and team development initiatives.
• Oversee menu and beverage development.
• Coordinate supplier and procurement relationships.
• Ensure systems, technology and operational readiness.
• Execute mock services and operational rehearsals.
• Develop and execute opening strategy and launch execution.
• Define the culture and personality of each outlet from inception.

Concept Development & Leadership

• Lead the pre-opening, opening and ongoing operation of all three outlets.
• Bring each concept to life while maintaining consistent Kimpton service standards.
• Build relationships with VIPs, regulars, influencers and the local F&B community.
• Identify opportunities for activations, events, partnerships and new revenue streams.
• Continuously evolve the concepts based on guest feedback, market trends and commercial opportunities.

Financial & Commercial Performance

• Own revenue, profitability, budgets, costs, productivity and commercial strategy.
• Drive beverage excellence across cocktails, spirits, wine and overall beverage performance.

Team Development & Culture

• Lead, coach and develop outlet managers and F&B teams.
• Build a culture that is warm, accountable, curious and fun.
• Build teams who are proud of where they work.
• Create service cultures that feel authentic to Kimpton.

Operations & Guest Engagement

• Be highly visible on the floor and genuinely connected with guests.
• Partner closely with Culinary, Sales & Marketing, Finance, Procurement and the wider hotel team.
• Establish each concept with its own personality and place within Dubai's dynamic F&B scene.

Qualifications & Experience

• 5+ years' progressive F&B leadership experience.
• Previous experience as a Restaurants & Bar General Manager, F&B Manager or senior multi-outlet leader.
• Strong experience across restaurants, bars and/or lifestyle F&B.
• Proven pre-opening and opening experience.
• Luxury, lifestyle, premium F&B or high-energy hospitality experience.
• Experience across restaurant, cocktail bar and poolside operations is a plus.
• Previous experience in Dubai/UAE is ideal.
