Role Purpose

The Junior Sommelier oversees bar operations and manages bartenders to ensure positive guest experiences and smooth bar running. The role combines beverage service expertise—including wine, beer, and cocktail preparation—with operational management and quality assurance across outlets.

Key Responsibilities

Beverage Service & Guest Experience

• Serve wine and beverages professionally, following proper service techniques.
• Provide wine recommendations and pairings to guests based on their preferences and menu choices.
• Serve beer and wine, make classic drinks, and create new recipes for cocktails.
• Uphold excellent guest service standards and contribute to the overall dining experience.
• Support all aspects of guest service and uphold core standards.

Wine & Beverage Knowledge

• Maintain knowledge of the wine list, including wine regions, vintages, varietals, and producers.
• Participate in regular wine tastings and training sessions.
• Stay updated on industry trends and emerging wine producers or regions.
• Apply knowledge and continual learning to the purchase, storage, and control of bar items.
• Maintain a comprehensive database of standard drink recipes.

Inventory & Stock Management

• Support the ordering and receiving of wine deliveries.
• Assist with wine inventory, stock rotation, and cellar organization.
• Oversee glassware cleaning, storage, and conduct weekly inventory.
• Monitor and manage operating supplies, reporting any maintenance needs.

Quality Assurance & Standards

• Set and enforce quality and quantity standards for drinks.
• Conduct regular quality assurance audits across all outlets.
• Ensure proper storage, handling, and presentation of all wines.
• Maintain a preventive cleaning and maintenance program for glassware and wine service equipment.

Outlet Operations & Management

• Oversee the outlet's bar operations and other bartenders' work.
• Manage POS (micros) buttons and pricing.
• Track and maintain the cocktail menu across all outlets.
• Implement effective cost control practices.
• Perform opening and closing duties.

Facility & Presentation

• Maintain cleanliness and organization of the wine cellar and service areas.
• Ensure the bar area maintains a positive visual appeal, including ambiance and cleanliness.

Marketing & Development

• Lead new beverage promotions and contribute creative ideas to ensure their success.
• Promote continuous development and refinement of cocktails offered at the outlets.

Skills & Competencies
