Role Overview
Commis Chef at Hilton. This role is part of the Hotels team and focuses on food preparation and kitchen support to deliver exceptional guest experiences.
Role Purpose
As a Commis Chef, you prepare and assemble food items according to recipes and standards, maintain kitchen hygiene and safety protocols, and support the kitchen brigade to ensure timely and high-quality service delivery.
Key Responsibilities
Preparation and Setup
- Prepare and set up kitchen equipment and workstations before service.
- Assemble and prepare ingredients required for daily menu items.
- Prepare simple food items in accordance with recipes and standards.
- Prepare the mise en place and handle food preparation and assist with food presentation as part of the kitchen brigade.
Service Support
- Assist in preparing food for service to ensure timely delivery.
- Follow portion control guidelines and presentation standards.
- Support senior chefs as required and collaborate with the team to ensure smooth kitchen operations.
Receiving and Storage
- Assist with receiving, checking, and storing deliveries according to FIFO and food safety guidelines.
- Maintain clean and organized storage areas at all times.
Hygiene and Safety
- Clean kitchen surfaces, equipment, and workstations after use.
- Handle waste, recycling, and linen in accordance with hygiene procedures.
- Maintain a hygienic work environment and high standards of personal hygiene.
- Adhere strictly to all Food Safety Standards and Personal Hygiene Rules.
- Complete and monitor Food Safety Checklists in a timely manner.
- Ensure compliance with HACCP and internal safety protocols.
Training and Development
- Attend all kitchen briefings and actively participate.
- Participate on-the-job training and skill development sessions.
