Role Overview
Chef De Partie at Apparel Group, responsible for the efficient production of their assigned kitchen section including food preparation, cooking, presentation and storage.
Role Purpose
Ensure efficient and compliant production of your assigned kitchen section while maintaining food standards, controlling costs, and supervising junior staff to deliver quality dishes for service.
Key Responsibilities
Food Production & Service
- Organize the daily preparation of your section.
- Plan and organize the daily routine according to menu requirements.
- Supervise and assist with the preparation of raw materials.
- Finish and present dishes for service.
- Prepare special dishes as requested.
- Determine the freshness of products and store them properly according to established standards.
Standards & Quality
- Abide by food standards in the kitchen.
- Maintain the required standard of operational hygiene according to cleaning rotas at all times.
- Keep your station clean at all times, especially before leaving at the end of shift.
- Be aware of restaurant policies and procedures relating to health, hygiene, and fire life safety.
Team Management & Training
- Conduct training for junior staff.
- Ensure your direct reports comply with health, hygiene, and fire life safety procedures.
Financial Management
- Maintain food cost within budget by controlling waste without compromising standards.
- Work with the Restaurant Manager to achieve departmental budget targets.
- Monitor and control departmental operations considering restaurant expenditure.
- Control and analyze departmental costs on an ongoing basis to ensure performance against budget.
- Implement corrective measures where necessary to produce positive business results.
Health, Safety & Security
- Familiarize yourself with emergency exits and evacuation procedures.
General
- Comply with the company's corporate code of conduct.
- Familiarize yourself with company values and model desired behaviors.
- Perform any other duties as allocated from time to time.
- Perform tasks as directed by Management in pursuit of business goals achievement.
