Role Purpose

Oversee the preparation of high-quality pastries and desserts while delivering memorable guest experiences through exceptional hospitality. Supervise the pastry section, maintain kitchen standards, and ensure consistent quality across all pastry and confectionery offerings.

Key Responsibilities

Pastry Production

• Create exceptional pastry and dessert offerings according to established recipes and presentation standards.
• Prepare, bake, decorate, and present a variety of pastries, desserts, breads, and confectionery items.
• Ensure consistency in quality and appearance across all products.

Team Leadership & Support

• Supervise and support junior pastry chefs and commis chefs.
• Guide and assist team members through training and direct support.
• Maintain efficient workflow in the pastry section.

Kitchen Standards & Hygiene

• Maintain a clean and organised pastry kitchen.
• Ensure all workstations, equipment, and storage areas are clean and tidy to the highest hygiene standards.
• Prevent cross-contamination.
• Uphold food safety and compliance standards.
• Adhere to all food safety, health and hygiene regulations.
• Ensure compliance with company policies.
• Maintain a safe working environment for both team members and guests.

Stock & Cost Management

• Monitor the quality and freshness of ingredients.
• Ensure correct storage procedures.
• Manage stock rotation.
• Report shortages or wastage promptly.
• Help minimise waste.
• Manage portion control.
• Contribute to achieving food cost targets while maintaining product quality and consistency.
